Ingredients

  • cups water 
  • cup wine dry white
  • teaspoon salt 
  • 0.3 teaspoon thyme leaves dried
  • 0.3 teaspoon oregano dried
  • 0.1 teaspoon ground pepper red (cayenne)
  • small onion sliced
  •  peppercorns black
  • sprigs cilantro leaves 
  • lb fish fillet 
  • 0.8 cup salad dressing 
  • 1.5 tablespoons dill dried fresh chopped
  • tablespoon chives fresh chopped
  • tablespoon parsley fresh chopped
  • tablespoon juice of lemon 
  • 1.5 teaspoons dijon mustard 
  • Dash ground pepper red (cayenne)
  • serving lemon wedges 

Equipment

  • wire rack

Directions

  1. In 12-inch skillet, heat all ingredients for the Salmon except salmon, Herb Mayonnaise and lemon wedges to boiling; reduce heat to low. Cover and simmer 5 minutes.
  2. Cut salmon into 6 serving pieces.
  3. Place salmon in skillet; add water to cover if necessary.
  4. Heat to boiling; reduce heat to low. Simmer uncovered about 14 minutes or until salmon flakes easily with fork.
  5. Carefully remove salmon with slotted spatula; drain on wire rack. Cover and refrigerate about 2 hours or until chilled.
  6. Meanwhile, in small bowl, mix all Herb Mayonnaise ingredients; cover and refrigerate until serving.
  7. Serve salmon with Herb Mayonnaise and lemon wedges.
