  • small shallots sliced into rings
  • tablespoons vegetable oil 
  • tablespoons citrus champagne vinegar

Directions

  1. Cook shallots and oil in a small saucepanover medium-high heat, stirring occasionally,until shallots are golden, 8–10 minutes.Using a slotted spoon, transfer shallots toa paper towel–lined plate; season with salt.

  3. Combine collard greens, radishes, andvinegar in a large bowl; season with saltand pepper.
  4. Drizzle with shallot oil and tossto coat. Top with crispy shallots.
