  • 0.5 pound ham hock 
  • teaspoon salt 
  • teaspoon sugar 
  • quart water

Directions

  1. Place collards in a large bowl; add water to cover, and set aside for 1 hour.
  2. Drain well
  3. Wash ham hock; place in a large Dutch oven.
  4. Add remaining ingredients; bring to a boil.
  5. Add collard greens, stirring well. Reduce heat; cover and simmer 2 hours or until greens are tender.
