  • 0.8 cup whole-kernel corn frozen thawed
  • 0.5 teaspoon basil dried
  • 0.3 cup parsley fresh finely chopped
  • 0.5 cup brown rice instant uncooked (such as Uncle Ben's)
  • cup onion chopped ( 1 medium)
  • 0.3 cup pecans toasted chopped
  • 0.5 teaspoon salt 
  • teaspoons yogurt-based spread (such as Brummel & Brown)

Directions

  1. Cook rice according to package directions, omitting salt and fat.
  2. Meanwhile, coat a large nonstick skillet with cooking spray; add onion, and cook 5 to 6 minutes or until brown.
  3. Add corn and basil; cook 2 minutes, stirring constantly.
  4. Remove from heat; add rice, parsley, pecans, yogurt-based spread, and salt. Toss gently.
