Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • tablespoons butter softened
  • 0.3 cup cilantro leaves fresh chopped
  • cups ears corn fresh ( 6 ears)
  • tablespoon juice of lime fresh
  • 0.8 cup milk 2% reduced-fat
  • 2.5 pounds potatoes - remove skin red quartered
  • 0.8 teaspoon salt 
  • ounces mozzarella cheese smoked shredded

Directions

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  2. Add corn; saut 5 minutes or until lightly browned. Cool.
  3. Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.
  4. Drain and return potato to pan.
  5. Add milk, cheese, and butter; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly.
  6. Add corn, cilantro, and remaining ingredients, stirring to combine.
