  • 1.5 cups corn kernels fresh ( 2 ears)
  • 0.5 cup tomatoes diced green
  • tablespoons jalapeno minced
  • 0.5 teaspoon kosher salt 
  • cup bell pepper diced red
  • tablespoons shallots minced
  • 0.5 cup sugar 
  • 0.5 cup tomatillo diced
  • 0.5 cup water 
  • cup citrus champagne vinegar

Directions

  1. Place first 6 ingredients in a medium saucepan; bring to a boil.
  2. Add corn and the remaining ingredients; simmer 15 minutes.
  3. Remove and discard bay leaf.
  4. Serve chowchow chilled or at room temperature.
