  • 0.1 teaspoon pepper black
  • tablespoon butter 
  • ounces spicy chicken sausage low-fat sliced
  • cups whole-kernel corn frozen thawed
  • cups less-sodium chicken broth fat-free
  • tablespoons flat-leaf parsley fresh chopped
  • 0.5 cup milk 2% reduced-fat
  • 0.3 cup cheddar cheese shredded reduced-fat
  • 0.5 cup onion finely chopped
  • 0.3 teaspoon salt 
  • cup water 
  • cups yukon gold potatoes cubed peeled

Directions

  1. Melt butter in a large saucepan over medium heat.
  2. Add onion; cook 2 1/2 minutes or until soft. Stir in potato and next 5 ingredients (through corn); bring to a boil. Reduce heat; simmer 15 minutes or until potato is soft.
  3. Remove 2 cups, pure, and return to pan.
  4. Stir in sausage and milk over low heat; cook until thick (about 5 minutes).
  5. Remove from heat.
  6. Garnish with cheese and parsley.
