  • 0.3 teaspoon pepper black freshly ground
  • cups corn kernels ( 6 ears)
  • large eggs lightly beaten
  • 0.5 cup egg substitute 
  • 0.3 cup chives fresh chopped
  • tablespoon thyme leaves fresh chopped
  • 1.5 cups milk 1% low-fat
  • 0.8 teaspoon salt

Directions

  1. Preheat oven to 35
  2. Combine corn, chives, thyme, salt, and pepper in a medium bowl.
  3. Combine milk, egg substitute, cream cheese, and egg in a medium bowl.
  4. Add the milk mixture to the corn mixture, and stir well to combine.
  5. Pour the corn mixture into an 11 x 7-inch baking dish coated with cooking spray.
  6. Bake at 350 for 55 minutes or until top of pudding is golden brown.
