Ingredients

  • oz diestel breakfast sausage drained chopped
  • 1.5 cups egg substitute 
  • tablespoons flour all-purpose
  •  bell pepper diced green
  • cup milk 
  • tablespoon cooking oil 
  •  onion minced
  • 0.5 teaspoon pepper 
  •  potatoes diced
  •  bell pepper diced red
  • 1.5 teaspoons salt divided
  • cup cheddar cheese shredded

Equipment

Directions

  1. Heat oil in medium skillet. Fry potatoes and one teaspoon salt in oil until golden.
  2. Add red and green peppers and onion; cook 5 minutes. Spoon into a greased 13"x9" casserole dish and top with sausage.
  3. Mix together egg substitute, milk, flour, 1/2 teaspoon salt and pepper in mixing bowl.
  4. Pour egg mixture over potato mixture; sprinkle with cheese.
  5. Bake, uncovered, at 350 degrees for 30 minutes.
