Ingredients

  • 12 ounce bacon cut into 2-inch pieces
  • pounds green beans fresh
  • 10  green onions finely chopped
  • 0.3 teaspoon pepper 
  • 0.8 teaspoon salt 
  • tablespoon water

Directions

  1. Remove strings from beans; wash and remove tough ends. Set beans aside.
  2. Cook bacon in a large saucepan until crisp; drain on paper towels, and set aside. Reserve 1/4 cup bacon drippings in pan.
  3. Saut onion in reserved bacon drippings until tender.
  4. Add beans; cook over medium heat 2 minutes, stirring well.
  5. Add water; cover and cook 30 minutes or until beans are tender.
  6. Add salt, pepper, and reserved bacon; stir well.
  7. Transfer to a serving bowl.
  8. Sprinkle relish over top for garnish, if desired.
