  •  boston lettuce leaves 
  • cup carrots shredded
  • cup couscous uncooked
  • 0.5 cup cucumber diced english
  • 0.3 cup mint leaves fresh chopped
  • 0.3 cup parsley fresh chopped
  • 0.5 cup spring onion chopped
  • 0.5 cup cranberry-orange relish 
  • 0.5 cup plum tomatoes diced
  • 0.3 teaspoon salt 
  • cups vegetable stock organic (such as Swanson Certified )

Directions
