Ingredients

  • 0.3 teaspoon pepper black freshly ground
  •  boston lettuce leaves 
  • cup carrots shredded
  • cup couscous uncooked
  • 0.5 cup cucumber diced english
  • 0.3 cup mint leaves fresh chopped
  • 0.3 cup parsley fresh chopped
  • 0.5 cup green onions chopped
  • 0.5 cup pomegranate-orange dressing 
  • 0.5 cup plum tomatoes diced
  • 0.3 teaspoon salt 
  • cups vegetable broth organic (such as Swanson Certified )

Directions

  1. Bring the broth to a boil in a medium saucepan; gradually stir in couscous.
  2. Remove from heat; cover and let stand 5 minutes. Fluff with a fork; cool.
