  •  apricots fresh pitted ripe cut into bite-size chunks (or nectarines, peaches, or plums)
  • tablespoons balsamic vinegar 
  • 0.3 teaspoon pepper black freshly ground plus more to taste
  •  chicken breast strips/pre-cooked/chopped 
  • 1.5 cups couscous instant
  • cup mint leaves fresh finely chopped
  • cup parsley fresh finely chopped
  • 0.3 teaspoon ground cinnamon 
  • 0.3 teaspoon ground cumin 
  • 0.5 teaspoon kosher salt plus more to taste
  • tablespoons olive oil 
  • 0.5 cup pistachios unsalted shelled
  • small shallots sliced in rings

Directions

  1. Place the couscous in a medium bowl. Bring 1 1/2 cups water to a boil and stir in the cinnamon, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Pour the mixture over the couscous. Cover and let stand until the couscous is soft, about 5 minutes. Uncover and fluff with a fork. Stir in the parsley, mint, and 2 tablespoons of the olive oil. Set aside.
  3. Cut the chicken into bite-size pieces and place in a medium bowl.
  4. Add the apricots, shallot, and pistachios.
