  • 0.5 cup celery chopped
  • tablespoon dijon mustard 
  • 0.3 cup cilantro leaves fresh minced
  •  garlic cloves minced
  • 0.5 cup bell pepper diced green
  • 1.5 teaspoons ground cumin 
  •  jalapeno seeded chopped
  • 0.3 cup catsup 
  • cup regular oats 
  • teaspoons olive oil 
  • cup onion chopped
  • 0.5 teaspoon pepper 
  • 0.5 cup bell pepper diced red
  • 0.5 teaspoon salt 
  • ounces sharp cheddar cheese shredded reduced-fat

Directions

  1. Preheat oven to 37
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add onion and next 6 ingredients (onion through jalapeo); saut 3 minutes. Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans). Spoon the potato mixture into a 9 x 5-inch loaf pan coated with cooking spray.
  4. Bake at 375 for 30 minutes.
  5. Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese.
  6. Bake an additional 10 minutes or until done.
