Ingredients

  • 0.5 cup mayonnaise reduced-fat
  • tablespoons basil pesto 
  • lb imitation crab fresh shredded rinsed cleaned
  • 0.5 cup breadcrumbs italian
  • 0.3 cup mayonnaise reduced-fat
  • tablespoons basil pesto 
  •  eggs beaten
  • tablespoons olive oil 
  • slices plum tomatoes italian
  • serving basil fresh
  • serving sun-dried olives 

Equipment

  • frying pan
  • paper towels

Directions

  1. In small bowl, mix sauce ingredients. Cover and refrigerate until serving.
  2. In large bowl, mix all crab cake ingredients except oil. Using 1/3 cup mixture for each, shape into eight 3-inch patties.
  3. In 10-inch nonstick skillet, heat oil over medium heat until hot.
  4. Add patties; cook 4 to 5 minutes on each side or until golden brown and thoroughly cooked.
  5. Drain on paper towels.
  6. Serve crab cakes topped with sauce.
  7. Garnish as desired.
