There is nothing quite like the rich, briny sweetness of fresh crabmeat elevated by the deep, savory warmth of roasted garlic. This recipe for Crab Cakes with Roasted-Garlic Mayonnaise transforms a simple dinner into an elegant main course that feels both rustic and refined. The star of the show is undoubtedly the house-made mayonnaise, where whole garlic cloves are slowly roasted in the oven until they surrender their pungency, turning into a soft, golden, and incredibly aromatic paste. When mashed with lemon juice and blended with reduced-fat mayonnaise, it creates a creamy, zesty base that perfectly balances the delicate texture of the crab without overwhelming it.

What makes these patties truly special is the careful attention to texture. By combining the tender crab with crisp, chopped celery and the fresh bite of thinly sliced scallion white parts, you create a complex flavor profile that sings with every bite. The mixture is bound with just enough bread crumbs to hold its shape, ensuring each cake remains light and flaky rather than dense. The final touch involves gently dredging the formed patties in additional crumbs before searing them in a skillet of hot butter and oil. This technique yields a magnificent golden-brown crust that locks in the juices, providing a delightful contrast to the soft, succulent interior.

Whether enjoyed as a sophisticated lunch or a satisfying dinner, these crab cakes offer a perfect harmony of flavors and textures. The combination of nutty roasted garlic, bright citrus notes, and the natural sweetness of the crab creates a dish that is sure to impress family and friends alike. With a moderate preparation time and a caloric balance that feels indulgent yet wholesome, this recipe is a testament to how simple ingredients, when prepared with care, can result in an unforgettable culinary experience.
