Ingredients

  •  avocados peeled seeded sliced
  • 0.3 cup canola oil 
  •  tuscan cantaloupe peeled seeded cut into chunks
  • ounce caviar (Sturgeon royal)
  • tablespoons champagne vinegar 
  • bunch chives chopped
  • pounds crab meat fresh shelled cooked
  • teaspoon dijon mustard 
  • 0.3 cup olive oil extra virgin 
  • tablespoons mayonnaise 
  • servings salt and pepper black freshly ground
  • servings sea salt and pepper black freshly ground fine
  • teaspoon shallots minced

Directions

  1. To make the vinaigrette, whisk together the vinegar, shallot, and mustard in a bowl. Slowly pour in the oils, whisking until emulsified. Season with salt and pepper.
  2. Squeeze any excess water out of the crabmeat.
  3. Place the crab in a mixing bowl with the mayonnaise, vinaigrette, and chives, and season with salt and pepper.
  4. Mix together well and set aside. Purée the cantaloupe in a blender.
  5. For each serving, place 2 tablespoons of the cantaloupe purée in the center of the plate.
  6. Place a ring mold on top and fill with a layer of sliced avocado and then crab.
