  • 0.5 cup vegetable oil 
  •  eggs 
  • cup apples shredded peeled ( 1 medium)
  • 1.5 cups flour all-purpose
  • 0.5 teaspoon baking soda 
  • 0.5 teaspoon double-acting baking powder 
  • 0.5 teaspoon salt 
  • 0.8 cup walnut pieces chopped
  • 0.5 cup cranberries dried
  • tablespoon sugar 
  • 0.5 teaspoon ground cinnamon

Directions

  1. Heat oven to 350°F. Grease bottom only of 8x4- or 9x5-inch loaf pan with shortening.
  2. In large bowl, mix 3/4 cup sugar, the oil and egg. Stir in apple, flour, baking soda, baking powder and salt. Stir in walnuts and cranberries.
  3. Pour batter into pan. In small bowl, mix 1 tablespoon sugar and the cinnamon; sprinkle over batter.
  4. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 1 1/2 hours, before slicing.
