Ingredients

  • 10 ounces cranberries 
  • tablespoons mint leaves fresh chopped
  • large pink grapefruits 
  • cup sugar

  • peeler

Directions

  1. Using vegetable peeler, remove peel (pink-yellowouter layer only) from 1 grapefruitin strips.
  2. Cut peel into 2-inch-long, 1/8-inch-widestrips (about 1/2 cup). Squeeze 1 cupjuice from grapefruits.
  3. Stir 1 cup sugar and 1 cup water inmedium saucepan over medium heat untilsugar dissolves.
  4. Add grapefruit peel; bringto boil. Reduce heat; simmer until peel issoft, about 15 minutes.
  5. Add 1 cup grapefruitjuice and cranberries; bring to boil. Reduceheat and simmer until berries burst, about10 minutes.
  6. Transfer to medium bowl. Stirin mint. Cover; chill until cold. DO AHEAD:Can be made 3 days ahead. Keep chilled.
