  • cup brown sugar 
  • teaspoon butter 
  • ounces cream cheese softened
  • 0.5 cup dijon mustard 
  • ounces mushrooms fresh sliced
  •  chicken breast halves boneless skinless
  • 0.5 cup walnuts chopped

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Melt butter in a skillet over medium heat.
  3. Saute mushrooms until tender. Reduce heat to low, and stir in cream cheese until melted.
  4. Remove from heat.
  5. Pound chicken breasts thin with a meat mallet.
  6. Spread with mushroom mixture, and roll up. In a small bowl, mix together brown sugar and Dijon mustard. Press mustard mixture onto chicken.
  7. Roll chicken in chopped nuts.
  8. Place in a baking dish.
  9. Bake in preheated oven for 15 to 20 minutes, or until chicken is no longer pink, and juices run clear.
