Ingredients

  • slices bacon gluten-free cut into 1-inch pieces
  • 1.3 lb pork loin boneless trimmed of fat
  • 0.5 teaspoon garlic salt 
  • 0.1 teaspoon pepper 
  • 18 oz cream of mushroom soup canned
  • 0.3 cup spring onion sliced
  • 0.5 cup cream gluten-free sour
  • serving parsley fresh chopped

Directions

  1. In 12-inch nonstick skillet, cook bacon over medium heat, stirring occasionally, until crisp.
  2. Remove bacon with slotted spoon; drain on paper towels.
  3. Drain all but 1 tablespoon bacon fat from skillet.
  4. Sprinkle pork chops with garlic salt and pepper.
  5. Add pork chops to bacon fat in skillet over medium heat. Cook pork 3 to 4 minutes, turning once, until lightly browned.
  6. Remove pork from skillet; set aside. Stir in soup and onions; heat to boiling, stirring occasionally. Reduce heat; simmer uncovered 5 minutes, stirring occasionally.
  7. Return pork to skillet. Cover; simmer 8 to 10 minutes, turning once, until pork is no longer pink in center.
  8. Remove from heat, stir in sour cream.
  9. Sprinkle with bacon and parsley.
