Ingredients

  •  celery stalks thinly sliced
  • 1.3 cups mayonnaise 
  •  onion thinly sliced
  • pounds potatoes - remove skin red
  • tablespoons red wine vinegar 
  • servings salt and pepper 
  • tablespoons pickle relish sweet
  • 0.3 cup coarse mustard

Directions

  1. Place potatoes in a large pot and add enough cold water to cover by 1 inch. Bring to a boil over high heat, reduce to medium-low and simmer until potatoes are easily pierced with a fork, 30 minutes.
  2. Drain; slightly cool.
  3. Cut potatoes in half and place in a large bowl.
  4. Add onion and celery. In a separate bowl, mix mustard with vinegar, mayonnaise, relish, salt and pepper.
  5. Pour over potatoes and gently stir to mix.
  6. Serve at room temperature or chilled.
