  • tablespoons butter 
  • 0.5 cup onion chopped (1 medium)
  • 0.3 cup flour all-purpose
  • 1.8 cups chicken broth (from 32-oz carton)
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper black
  • 0.1 teaspoon ground pepper red (cayenne)
  • 11 oz corn southwestern style undrained canned
  • tablespoons chives fresh chopped
  • serving chives fresh for garnish, if desired
  • 0.5 cup frangelico

Directions

  1. In 2-quart saucepan, melt butter over medium heat.
  2. Add onion; cook 3 to 5 minutes, stirring occasionally, until tender.
  3. Stir in flour until well blended. Gradually stir in broth. Stir in salt, black pepper and red pepper; heat to boiling. Reduce heat; cook, stirring frequently, until thickened.
  4. Stir in half-and-half, corn and 2 tablespoons chives. Cook until thoroughly heated.
  5. Serve sprinkled with additional chives.
