  • tablespoons apple cider vinegar 
  • stalks celery chopped
  • 0.5 cup dijon mustard (recommended: Zatarains)
  • cloves garlic chopped
  • 0.8 cup mayonnaise 
  • pounds potatoes red cubed scrubbed well
  • servings salt and pepper black freshly ground
  • teaspoon sugar 
  • small vidalia onion chopped

Directions

  2. Place the cubed potatoes in a large pot of cold salted water. Bring to a boil. Cook potatoes until they are fork tender.
  3. Drain in a colander and let cool.
  4. In a small bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt and pepper.
  5. Once cool, add potatoes to a large bowl.
  6. Add chopped onions, celery, and garlic.
  7. Pour the dressing over the potatoes and mix well. Season with salt and pepper, if needed.
