Ingredients

  • tablespoons regular balsamic vinegar 
  • cup coarsely beets raw fresh packed grated peeled () (2 medium)
  • tablespoons horseradish white prepared
  • tablespoons olive oil divided
  • 1.3 pounds cabbage red very thinly sliced
  • cup onion paper-thin red

Directions

  1. Whisk 4 tablespoons oil, vinegar, and horseradish in large bowl to blend.
  2. Add beets and onion; toss to blend.
  3. Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat.
  4. Add cabbage and toss until wilted and just crisp-tender, about 3 minutes. Stir into beet mixture. Season to taste with salt and pepper.
  5. Let stand 10 minutes before serving, stirring occasionally.
