  • 0.3 teaspoon pepper black freshly ground
  • teaspoons capers divided drained
  • cup cucumber peeled sliced
  • 0.3 cup less-sodium chicken broth fat-free
  •  garlic cloves chopped
  • Dash ground pepper red
  • tablespoon juice of lemon fresh
  • 0.3 cup mayonnaise reduced-fat
  •  plum tomatoes cut into (1/4-inch-thick) slices
  • 0.3 cup onion red divided finely chopped
  • tablespoons red wine vinegar 
  • cups torn romaine lettuce 
  • 0.5 teaspoon salt 
  • ounce tuna in olive oil light drained canned

Directions

  1. To prepare dressing, combine the first 9 ingredients in a blender; process until smooth, scraping sides.
  2. To prepare salad, combine lettuce, cucumber, green bell pepper,red bell pepper, and plum tomatoes in a large bowl; add dressing, tossing gently to coat.
  3. Place about 2 1/2 cups salad on each of 4 plates.
  4. Sprinkle each serving with 1 tablespoon onion and 1 teaspoon capers.
