  • cup baby carrots 
  • cups broccoli florets 
  • large eggs 
  • 0.5 cup flour all-purpose
  • teaspoons optional: dill fresh chopped
  •  spring onion thinly sliced
  • 0.1 teaspoon ground pepper red
  • cup yogurt plain low-fat
  • tablespoons olive oil 
  • 0.3 cup parmesan grated
  • 0.5 teaspoon salt 
  • cups water

Directions

  1. Place 4 cups water, broccoli, and carrots in a small saucepan; bring to a boil. Cook 4 minutes; drain. Pat broccoli mixture dry with paper towels; finely chop.
  2. Place broccoli mixture and flour in a large bowl; stir to coat.
  3. Add cheese, salt, pepper, onions, and egg to broccoli mixture; stir to combine.
  4. Heat a large nonstick skillet over medium-high heat.
  5. Add oil to pan; swirl to coat. Spoon 1/4 cup broccoli mixture into a dry measuring cup.
  6. Pour mixture into pan; flatten slightly. Repeat procedure 7 times to form 8 fritters. Cook 4 minutes on each side or until golden brown.
  7. Combine yogurt and dill in a small bowl.
  8. Serve yogurt mixture with fritters.
