Ingredients

  • stick butter melted
  • cups buttermilk 
  • 3.5 pound chicken pieces 
  • 0.1 teaspoon ground pepper black
  • 0.1 teaspoon ground pepper red
  • tablespoons parmesan cheese grated
  • 0.1 teaspoon salt 
  • 16 ounce herb-seasoned stuffing mix (4 cups)

Equipment

Directions

  1. Soak chicken in buttermilk 8 hours.
  2. Drain and discard buttermilk.
  3. Process stuffing mix and next 4 ingredients in a food processor or blender until fine crumbs.
  4. Dip chicken pieces in butter; roll in stuffing mixture until well coated.
  5. Place chicken on a baking sheet.
  6. Bake at 350 for 1 hour and 10 minutes or until golden brown.
  7. NOTE: For testing purposes only, we used Pepperidge Farm Stuffing.
