  • 0.1 teaspoon pepper black freshly ground
  • tablespoons dijon mustard 
  • tablespoon parsley fresh minced
  • tablespoon thyme leaves fresh chopped
  • pound pork tenderloin trimmed cut into 8 medallions
  • tablespoons olive oil extra-virgin
  • 0.5 cup panko bread crumbs (Japanese breadcrumbs)
  • 0.1 teaspoon salt

Directions

  1. Preheat oven to 45
  2. Rub mustard evenly over pork medallions.
  3. Combine panko, thyme, parsley, salt, and pepper in a large bowl. Dredge pork in panko mixture.
  4. Heat a large ovenproof skillet over medium-high heat.
  5. Add oil to pan; swirl to coat.
  6. Add pork; saut 2 minutes or until golden brown. Turn pork.
  7. Place skillet in oven; bake at 450 for 8 minutes or until pork reaches 14
  8. Let stand 3 minutes.
