If you're looking for a culinary adventure that combines bold flavors and irresistible textures, then our Crispy Pork with Avocado Salsa and Tomato Salsa is sure to delight your taste buds! This gluten-free and dairy-free recipe is perfect for those who want a hearty meal without compromising on dietary preferences. With a prep time of just 45 minutes and a generous serving size of eight, it's ideal for family gatherings or casual get-togethers with friends.

The star of this dish is the perfectly tender and crispy country-style pork ribs, marinated in a flavorful blend of fresh orange juice, garlic, and a hint of brandy. As the pork simmers, it absorbs the zesty notes, creating a richness that will have everyone coming back for seconds. Once cooked to perfection, the pork is shredded into strips and finished off with a crispy sear that brings out a delightful crunch.

To complement the savory goodness of the pork, we've paired it with two refreshing salsas. The creamy avocado salsa adds a luxurious touch, while the fresh tomato salsa provides a burst of acidity that brightens each bite. Served with warm corn tortillas, this dish creates a harmonious balance of flavors and textures, making it a showstopper for lunch or dinner! So gather your ingredients, fire up that frying pan, and treat yourself and your loved ones to a delicious feast that everyone can enjoy.

  • 1.5 cups orange juice fresh
  • teaspoon orange zest grated
  • pounds pork ribs boneless country-style
  • servings salsa fresh
  • teaspoons sea salt fine
  • cups water ()

Equipment

  • bowl
  • frying pan

Directions

  1. Cut pork pieces crosswise into thirds.
  2. Cut off any big chunks of fat from pork and reserve; leave small pieces of fat attached to pork.
  3. Combine pork, reserved fat, 2 cups water, and next 4 ingredients in deep 12-inch skillet. Bring to boil. Reduce heat, cover, and simmer until pork is tender, stirring occasionally, about 1 hour 45 minutes, adding more water by 1/4 cupfuls if necessary to keep pork partially submerged.
  4. Uncover; boil pork mixture until liquid is reduced by half, about 10 minutes. Stir in brandy; boil until liquid evaporates and meat browns and begins to get crisp, stirring often, about 15 minutes. Cool meat slightly. Discard any loose pieces of fat. Tear meat into strips; return to skillet. (Can be made 1 day ahead. Cover and chill.)
  5. Add 2 tablespoons water to skillet. Cover and rewarm pork over medium-low heat, stirring, about 5 minutes. Season with more salt, if desired.
  6. Transfer to bowl.
  7. Serve with warm tortillas, Avocado Salsa, and tomato salsa.
