  •  bay leaves 
  •  carrots coarsely chopped
  • rib celery coarsely chopped
  • 0.5 cup chicken broth 
  •  garlic cloves crushed
  • large onion cut into wedges
  • 0.5 teaspoon pepper 
  • 1.8 lb pork belly 
  • teaspoon salt 
  •  thyme sprigs fresh

Directions

  1. Preheat oven to 32
  2. Make 1/4-inch-deep cuts in fattiest side of pork.
  3. Sprinkle pork with salt and pepper.
  4. Place in a large roasting pan.
  5. Place onion and next 5 ingredients around pork.
  6. Pour broth in pan, and cover tightly with aluminum foil.
  7. Bake at 325 for 3 to 3 1/2 hours or until fork-tender.
  8. Remove pork from pan, and let stand 15 minutes. Discard vegetables and liquid in pan.
  9. Cook pork in a large cast-iron skillet over medium-low heat 8 to 10 minutes on each side or until browned and crisp.
