Ingredients

  • 250 cabbage chinese
  • 175 z cabbage white
  •  celery stalks 
  •  carrots 
  • small handful mint leaves chopped
  • small handful coriander chopped
  • 200 prawn cooked peeled
  • tbsp roasted peanut chopped
  • small chillies red sliced
  •  garlic clove crushed
  • tbsp caster sugar 
  • tbsp rice vinegar 
  • tbsp juice of lime 
  • tbsp fish sauce

Directions

  1. Shred the cabbages, celery and carrot finely on a mandolin or grate them on the largest holes on a grater.
  2. Add the mint and coriander to the vegetables along with the prawns. Toss everything together.
  3. Make the dressing by whisking all the ingredients together. Dress the salad and tip it into a bowl, sprinkle over the peanuts and serve straight away.
