Ingredients

  • cups poached berries mixed fresh sliced (blackberries, blueberries, raspberries, and/or strawberries)
  • tablespoons honey 
  • cup jicama diced peeled
  • 0.3 cup juice of lime fresh
  • tablespoons lightly mint leaves fresh packed
  • 0.8 cup coconut or dried unsweetened sliced (see notes)

Directions

  1. In a 6- to 8-inch pan, stir coconut often over medium-high heat until lightly browned, 2 to 3 minutes.
  2. Pour from pan and set aside.
  3. In a large bowl, whisk together lime juice and honey.
  4. Add berries and jicama. Tear mint leaves into small pieces and scatter over salad.
  5. Add coconut and mix gently.
