Ingredients

  • 450 carrots 
  • small celery root 
  •  onion red sliced
  • 50 pecans mixed good chopped
  • tbsp olive oil 
  • tbsp red wine vinegar 
  • tsp dijon mustard 

Equipment

  • food processor
  • whisk

Directions

  1. Peel the carrots and celeriac and grate in a food processor.
  2. Mix together with the onion and nuts.
  3. Whisk the oil and vinegar with some mustard, salt and pepper and toss with the salad immediately to stop the celeriac going brown. Cover and keep in the fridge for up to a day.
