Ingredients

  • 12 slices oscar mayer bacon 
  • cup milk cheddar cheese shredded 2% kraft
  • 0.3 cup knudsen cream light sour
  • 12  eggs 
  • cup mushrooms fresh sliced
  •  green onions divided chopped
  • cup milk mozzarella cheese shredded 2% kraft
  •  tomatoes divided chopped

Equipment

  • frying pan
  • paper towels
  • oven
  • whisk
  • baking pan

Directions

  1. Heat oven to 350F.
  2. Reserve 2 Tbsp. each onions and tomatoes. Cook bacon in large skillet until crisp.
  3. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet.
  4. Drain bacon on paper towels.
  5. Add mushrooms to reserved drippings; cook and stir 2 min. or until tender.
  6. Remove from heat. Crumble bacon.
  7. Add to skillet with remaining onions and tomatoes; mix well.
  8. Beat eggs and sour cream with whisk until blended.
  9. Pour into 13x9-inch baking dish sprayed with cooking spray; top with bacon mixture and cheeses.
  10. Bake 30 min. or until center is set. Top with reserved onions and tomatoes.
  11. Let stand 5 min. before cutting to serve.
