Ingredients

  • 10 ounce broccoli frozen dry thawed drained chopped
  • cup egg substitute fat-free
  • cup milk fat-free
  • 12 ounces cheddar cheese shredded reduced-fat
  •  mushrooms fresh whole sliced
  • small onion finely chopped
  • 0.3 teaspoon pepper 
  • 10 ounce pkt spinach frozen dry thawed drained chopped

Directions

  1. Beat cream cheese in a large bowl at medium speed of an electric mixer until creamy.
  2. Add milk, egg substitute, and pepper; beat until smooth. Stir in cheese.
  3. Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Cook spinach and next 3 ingredients just until tender and liquid evaporates. Cool slightly.
  4. Combine egg mixture and spinach mixture, stirring well.
  5. Pour into a 10-inch quiche dish coated with cooking spray.
  6. Bake, uncovered, at 350 for 45 to 50 minutes or until center is set.
  7. Remove from oven and cool on a wire rack 10 minutes.
  8. Cut into 8 pieces, and serve with salsa, if desired.
