Ingredients

  •  chicken breast halves - pounded boneless skinless thin
  • 1.5 cups cooking wine dry white
  • 10 ounce pkt spinach frozen thawed drained chopped well
  • tablespoons olive oil divided
  • 0.5 cup parmesan cheese freshly grated
  • slices pancetta thinly sliced
  • slices provolone cheese 
  • servings salt and pepper black to taste

Directions

  1. Brush each chicken cutlet with olive oil and season with salt and pepper.
