Ingredients

  •  cucumber seeds removed peeled halved
  • 0.5 cup feta cheese crumbled
  • 0.5 cup cilantro leaves fresh
  •  juice of lime 
  • tablespoons olive oil 
  • servings pepper black freshly ground
  • 0.3 cup spring onion green thinly sliced
  •  pomegranate seeds

Directions

  1. Cut the cucumbers into slices 1/4 inch thick.
  2. Put the cucumber slices in a bowl with all but 4 tablespoons of the pomegranate seeds.
  3. Add the scallions, cilantro, lime juice, and olive oil. Toss and season with salt.
  4. To serve, divide the salad among bowls and top with the crumbled feta, a tablespoon of pomegranate seeds, and a few grinds of pepper.
