Ingredients

  • rib celery thinly sliced
  • teaspoon celery seed 
  • large cucumbers seedless thinly sliced
  • small bell pepper green thinly sliced
  • 0.5 teaspoon mustard seed 
  • small bell pepper red thinly sliced
  • large onion red thinly sliced
  • 1.5 tablespoons salt 
  • cup sugar 
  • cup vinegar white

Directions

  1. Combine first 6 ingredients in a large glass bowl; let stand at room temperature, stirring occasionally, 1 hour.
  2. Drain.
  3. Bring sugar and next 3 ingredients to a boil in a medium saucepan over medium-high heat. Boil, stirring constantly, 1 minute or until sugar is dissolved.
  4. Let stand 1 hour.
  5. Pour evenly over vegetables. Cover and chill 2 hours.
