  • ounce feta divided crumbled
  • 0.5 cup mint leaves fresh coarsely chopped
  • servings kosher salt and pepper black freshly ground

  • tablespoons olive oil extra-virgin
  • cup olives assorted pitted halved (such as Kalamata or Gaeta)
  • bunch scallions chopped
