Ingredients

  • 0.3 teaspoon pepper black
  • tablespoons cilantro leaves fresh finely chopped
  • 0.3 teaspoon ground coriander 
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon kosher salt 
  •  lemon wedges 
  • teaspoon olive oil 
  • 24 ounce salmon fillet 
  • tablespoon shallots finely chopped

Directions

  1. Combine cilantro, shallots, oil, cumin, coriander, salt, and pepper in a small bowl, stirring to form a paste.
  2. Place fish, skin side down, in a shallow baking dish. Coat top of fish with cilantro mixture. Cover; refrigerate 1 hour.
  3. Preheat oven to 40
  4. Arrange fish on the rack of a roasting pan coated with cooking spray, and place rack in pan.
  5. Bake at 400 for 10 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
  6. Serve with lemon wedges.
