  • 24 oz catfish fillets 
  • tsp chipotle chiles in adobo sauce canned minced
  • 0.3 cup self-rising cornmeal 
  • teaspoons ground cumin 
  • cup mayonnaise 
  • tablespoons orange juice 
  • 1.5 teaspoons salt divided
  •  buns whole-wheat split toasted
  • slices tomato lettuce shredded

  2. Combine cornmeal, cumin, and remaining 1 tsp. salt. Rinse fish, and dredge in cornmeal mixture. Spray fish evenly with cooking spray.
