  •  fully ripened avocado from mexico pitted cubed peeled halved
  • 0.5 cup cucumber diced
  • 0.5 teaspoon cumin 
  • 0.3 cup cilantro leaves fresh chopped
  • 0.3 teaspoon ground pepper red to taste
  • tablespoons juice of lime 
  • tablespoon olive oil 
  • 0.3 cup onion diced red
  • teaspoon salt divided
  • 16 ounce chicken breast halves boneless skinless
  • cup tomatoes chopped

Directions

  1. In small bowl, combine 1/2 teaspoon of the salt, the cumin and pepper; rub on chicken.
  2. In large non-stick skillet, heat oil over medium heat.
  3. Add chicken; cook, turning occasionally, until no longer pink in the center, about 10 minutes.
  4. Meanwhile, in medium bowl, combine Avocado, tomato, cucumber, onion, cilantro and remaining 1/2 teaspoon salt.
  5. Serve over cumin-rubbed chicken with whole grain couscous or rice, if desired.
