Ingredients

  • cups coarsely carrot shredded
  • 0.3 cup parsley fresh finely chopped
  •  garlic cloves crushed
  • teaspoon ground cumin 
  • tablespoons juice of lemon fresh
  • tablespoon olive oil extra-virgin
  • 0.1 teaspoon pepper 
  • 0.3 teaspoon salt 
  • tablespoon water

Directions

  1. Steam carrot, covered, 3 minutes or until crisp-tender. Rinse under cold water, and drain well. Spoon into a medium bowl; set aside.
  2. Place a small skillet over medium-low heat.
  3. Add cumin; cook 20 seconds, stirring constantly.
  4. Remove from heat.
  5. Add lemon juice and next 5 ingredients (lemon juice through garlic); stir with a whisk until blended.
  6. Add lemon juice mixture and parsley to carrot; toss well. Cover and chill.
