  • 1.5 cups rice white uncooked
  • teaspoon curry powder 
  • 0.3 cup parsley fresh chopped
  •  garlic cloves minced
  • tablespoon juice of lemon fresh
  • 0.3 teaspoon lemon rind grated
  • 21 ounce low-salt chicken broth canned
  • tablespoons butter reduced-calorie
  • 0.5 cup onion finely chopped
  • 0.5 teaspoon salt 
  • 0.5 cup water

Directions

  1. Melt margarine in a saucepan over medium heat.
  2. Add onion and garlic; saut 5 minutes.
  3. Add rice and curry powder; cook 1 minute, stirring constantly.
  4. Add salt, broth, and water, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
  5. Remove from heat, and stir in the remaining ingredients.
  6. Let stand, covered, 10 minutes; fluff with a fork.
