Ingredients

  • 10 cup cauliflower florets (2 medium heads)
  • 0.5 cup cilantro stems finely chopped
  • tablespoons mild curry powder 
  • tablespoons ginger fresh peeled finely chopped
  • tablespoon garlic minced
  • teaspoons olive oil 
  • cups onion thinly sliced
  • teaspoon salt 
  • cup whole-milk yogurt 
  • cup tomatoes peeled seeded chopped

Directions

  1. Heat the oil in a Dutch oven over medium-high heat.
  2. Add onion and ginger; cover and cook 3 minutes, stirring frequently. Reduce heat to medium.
  3. Add Mild Curry Powder and garlic; cook 30 seconds, stirring constantly.
  4. Add cauliflower and next 4 ingredients (cauliflower through salt), stirring well to combine. Bring to a boil (yogurt will curdle); cover, reduce heat, and simmer 20 minutes or until cauliflower is tender.
  5. Serve with lemon wedges and cilantro sprigs, if desired.
