Ingredients

  • cup julienne-cut carrot 
  • cup couscous uncooked
  • tablespoon curry powder 
  • tablespoon flour all-purpose
  • 0.3 cup cilantro leaves fresh chopped
  • 14 ounce coconut milk light divided canned
  • 0.3 cup raisins 
  • teaspoon salt divided
  • pound skinned cut into 1/2-inch strips
  • teaspoons vegetable oil 
  • cup water

Directions

  1. Combine the water, 3/4 cup coconut milk, and 1/2 teaspoon salt in a medium saucepan. Bring to a boil; gradually stir in couscous.
  2. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.
  3. Combine 1/2 teaspoon salt, flour, and curry powder.
  4. Add the chicken, and toss gently to coat.
  5. Heat the oil in a large nonstick skillet over medium-high heat.
  6. Add chicken, and stir-fry for 5 minutes. Stir in the remaining coconut milk, carrot, and raisins; reduce heat, and simmer for 7 minutes or until the chicken is done, stirring occasionally.
  7. Serve over couscous.
