Ingredients

  • 2.5 pounds cut up chicken pieces 
  • tablespoons curry powder 
  • 0.1 cup green onion chopped for topping
  •  lime cut into wedges
  • 12 ounce chutney 
  • tablespoons olive oil 
  • 0.3 cup peanuts chopped
  •  bell pepper red thinly sliced

Directions

  1. Rinse chicken and pat dry. In a large skillet heat oil until almost hot.
  2. Add chicken, skin side down. Brown chicken until lightly browned on both sides.
  3. Add curry powder, chutney and red bell pepper. Simmer 30 minutes over medium low heat. Top chicken with lime wedges, chopped scallions and peanuts.
  4. Serve immediately.
