  • 16 ounce broccoli and cauliflower spears 
  • teaspoons curry powder 
  • teaspoon fish sauce 
  • tablespoon bottled ground ginger fresh
  • cup coconut milk light
  • 0.3 cup soya sauce low-sodium
  • cup bell pepper red chopped
  • 3.5 ounce boil-in-bag rice long-grain
  • tablespoon sesame oil 
  • 1.5 pounds shrimp deveined peeled

Directions

  1. Prepare rice according to package directions.
  2. While rice cooks, heat oil in a large nonstick skillet over medium-high heat.
  3. Add ginger and curry; cook 30 seconds, stirring constantly.
  4. Add bell pepper, and broccoli and cauliflower spears; cook 5 minutes, stirring frequently.
  5. Add shrimp; cook 5 minutes or until shrimp are done, stirring frequently.
  6. Add coconut milk and remaining ingredients; cook 4 minutes or until sauce is slightly thick.
  7. Serve over rice.
