  • tablespoon ginger fresh grated peeled
  • 0.8 cup golden raisins 
  • cup bell pepper green cubed
  • pound lamb stew meat 
  • cups onion diced
  • cups plum tomatoes diced
  • cup bell pepper red cubed
  • 0.5 teaspoon salt 
  • teaspoons vegetable oil

Directions

  1. Heat oil in a large Dutch oven over medium heat.
  2. Add 1 tablespoon curry powder and salt; saut 10 seconds.
  3. Add lamb and onion, and cook 5 minutes over medium-high heat or until the lamb is browned.
  4. Add potato and next 6 ingredients (potato through ginger), and cook 2 minutes.
  5. Add tomato and broth; cover, reduce heat, and simmer 35 minutes or until vegetables are tender.
